Poached Wild Barramundi
Ingredients:
• Barramundi fillets (wild not farmed or imported)
• 2 Limes
• 4 Cloves of garlic
• Olive Oil
• Black Cracked Pepper
• Chopped parsley or coriander
• Basmati Rice (1/2 cup per person)
• Turmeric
• Light Soy Sauce
Method:
1. Slice Barramundi across fillet into portions of 4cm wide
2. Drizzle olive oil around the bottom of an oven proof dish leaving a small space between each serve.
3. Top with cracked pepper and a dollop of butter on each serve.
4. Cover with lid or foil and bake in a pre heated oven on 200oC for 20 minutes or until fish is white and tender.
5. Meanwhile cook basmati rice with a sprinkling of turmeric (enough to colour the rice)
6. Squeeze lime into a small dish, add crushed garlic, chopped parsley or coriander and when fish is cooked pour in the juices from the pan.
7. Place rice on each plate, add a little soy sauce over the rice and top with the fish portion.
8. Spoon the lime mixture and garnish with a sprig of parsley or coriander.
9. Serve with a tossed salad
